Chicken Bruschetta

Ingredients:

4 pieces chicken breast

400 gr / 14 oz tomatoseed oil

120 gr / 4.2 oz onions

1 clove garlic

4 sprigs basil

4 tablespoons olive oil

1 teaspoon white balsamic vinegar

dried oregano

salt and pepper roasted pine seeds

Instructions

Wash the tomatoes, quarter them and remove the seeds. Peel the onion and garlic. Finely dice everything. Wash the basil and chop the leaves. Mix the prepared ingredients with 2 tablespoons of oil, vinegar, salt and pepper. Pat the meat dry and fry in 2 tablespoons of hot oil, turning occasionally, for about 10 minutes. Season with salt, pepper and oregano. Spread the tomato mix on top and sprinkle with toasted pine nuts.
